4.Mix Your Wet Ingredients.

1. Gather Ingredients & Prepare the Cake Pan.
Begin by preheating your oven to 375°F. Grease a 9” round cake pansand line the bottom with parchment paper for easy removal.
Next, in a large bowl, beat together the butter and sugar until light and fluffy. Add eggs one at a time ensuring each is fully incorporated before adding the remaining ingredients. Finish off by stirring in pineapple chunks and pecans—yum!
2.Cream Butter & Sugar for the Cake Batter.

Thoroughly combine flour and sugar in a large mixing bowl. Add milk and shortening and beat for 2 minutes. Add eggs, vanilla, and Coconut Extract. Beat an additional two minutes, scraping the side of bowl as needed.
Evenly spread batter into prepared pans. Tap pans on the counter several times to remove air bubbles. Bake 30 minutes or until a toothpick inserted near the center of the cake comes out clean.
If you must cook longer, just do it in 5-minute increments. Cool on wire cake racks for 5 to 10 minutes before removing cakes from pans. Finish cooling on wire racks. Note: You can leave your cake in the 13x9x2-inch to cool and frost it in the pan. Make sure the cake is completely cooled before frosting!
3. Make the Coconut Cream Filling and Frosting.
To make the coconut cream filling and frosting you will need: 2 Tablespoons Sugar, 1/4 Cup Reduced Fat (lite) Coconut Milk(Not Cream of Coconut), 2-3 Cups of Flaked Coconut (Sweetened).
Filling: In a small microwavable bowl, microwave 2 tablespoons sugar and the coconut milk on High 1 minute. Stir until sugar dissolves. Brush half of the coconut milk mixture over 1 layer cake within 2 inches of edge.
Frost with 1 cup of frosting; sprinkle with 1/2 cup of the coconut. Top the second cake layer; brush with remaining coconut milk mixture. Frost with 1 cup frosting; sprinkle with 1/2 cup coconut. Top with remaining cake layer. Spread the remaining frosting on top and sides of the cake. Sprinkle with remaining coconut.
4. Assemble the Cake Layers and Frosting.
First make the frosting. For this you will need: 2 (14 oz) Packages of Coconut (Sweetened), 2 (16 oz) Sour Cream (or one 32 oz), 2 (8 oz) Cool Whip (or one large), 4 Cups of Powdered Sugar. You should have these ingredients already from #1.
Next, Freeze Coconut. Mix sour cream and powdered sugar. Add frozen coconut. Lastly fold in the Cool Whip. This will frost a 2–3-layer cake.
Before you can begin to assemble the cake layers and frosting, it is important to make sure that your layers are cooled completely.
Place one of the cake layers on a serving platter or cake stand and spread 1/3 of your coconut cream filling evenly over the top.
Place the second layer of the cake on top of this and spread the remaining filling across it. Finally, spread the frosting smoothly over your coconut cream frosting and finish by sprinkling extra shredded coconut over top. Enjoy!
5. Decorate with Toasted Coconut Flakes and Berries.
For a final addition, sprinkle toasted coconut flakes around the sides of the cake or place them in an even circle near top of the cake.

Making a moist and fluffy cake doesn’t have to be difficult. With the right steps, including avoiding common cake-making mistakes, finding the perfect cake recipe, and measuring ingredients carefully, you can take the stress out of baking the perfect cake.
1. Choose the Right Cake Batter.
When baking a cake, it is important to choose the right type of batter. There are three common types of batters used in cakes – Pound cake, butter cake, and sponge cake.
Each has its own unique characteristics making them suitable for several types of cakes. Pound cake has a dense crumb and is great for heavier fruit-laden cakes. While sponge is great for creating light and fluffy angel food or chiffon cakes.
Meanwhile, Butter cake is often used in more traditional layer cakes due to its creamy texture. Butter cake can hold up to bold flavors.
So, no matter which type of cake batter you choose, it is important to ensure that your cake has enough moisture. Adding a few tablespoons of milk, oil or melted butter can help keep your cake moist during the baking process.
Additionally, pay attention to the ingredient temperature when making your batter and remember to add your wet ingredients first.
Finally, be sure to bake just until your cake is set (the internal temperature should reach 200F-210F). Overcooking can dry out the cake.
2. Use a Properly Greased and Floured Cake Pan.
It’s essential to properly grease and flour your cake pans so it doesn’t stick to the sides of the pan. And so, they won’t come out too dry.
Grease the bottom and sides of the pan with butter or cooking spray and make sure it’s evenly coated. Then add enough flour to the surface of the pan. Turning and tapping it so that the entire surface is lightly dusted with flour.
Shake out any excess flour before you pour in your cake batter. This will ensure an evenly cooked, moist, and delicious cake every time!
If you’ve greased and floured your cake pan properly, your cake should slide right out once cooled. You can also make sure to do the toothpick test by inserting a toothpick into the center of the cake. If it comes out clean, it’s done. This will help you to make sure it’s cooked through before taking it out of the oven.
Note: If you use cooking spray with flour, you do not need to add any flour! This is so much easier; one step and you are done.
3. Avoid Overbeating the Mixture.
Overbeating the mixture can shrink and make your cake dense. Beat the mix until it’s just blended. Overmixing causes th cake to become tough, dry, and rubbery.
Once you’ve added your wet and dry ingredients together use a spatula to gently fold the batter over itself. This also helps combine all the ingredients better without making them tough or tough-textured.
It’s important to remember that all recipes require different beating times. Cakes that use baking powder as the raising agent do not need as much beating. Cakes that use self-rising flour tend to need more mixing.
It can be difficult to judge when the mix is correct, so keep an eye on consistency. If your cake batter starts to look ‘curly’ or has a consistency of play dough, then it’s been overbeaten. Your cake will crumble when removed from the tin.
To avoid this, don’t overwork or overmix the cake batter. Check your oven temperature is preheated correctly so that your cake bakes evenly. That way you should ensure your cake comes out with a moist texture each time.
4. Preheat Your Oven and Monitor It Closely.
Preheat your oven so that it is at the right temperature before you start baking. Be sure to check the inside of your cake every 10 minutes and take note of how it is browning.
Letting cakes bake further than necessary will result in a dense and dry texture, while underbaking a cake can contribute to a fallen or sunken center. Using an oven thermometer helps ensure that the heat is calibrated correctly for perfectly baked cakes!
Additionally, prevent cake falls by ensuring the pans you use are not too large or deep. According to Delish.com, a cake pan should be no more than two inches deeper than the batter it houses; this will also help your cakes retain their moisture as baking times for deeper pans could differ from what is recommended for flatter surfaces.
It’s also important Your make sure your cake is cooked evenly so that there are no moist spots along the sides or top. Take your cakes out of the oven when they become golden brown and the center of the cake springs back after you push down on it lightly with your finger.
5. Don’t Open the Oven Door Too Early or Too Often.
Opening the oven door at the wrong time can cause your cake to fall in the center. Or worse – to collapse! To avoid this, try to keep oven door checks and opening to a minimum.
Waiting until 10 minutes before you expect the cake to be done is best. Opening the oven too often will cause your cake’s temperature to drop and could prevent it from rising properly.
When checking on the progress of your cake, keep in mind that it will continue to bake after you take it out the oven.
Insert a pronged skewer or toothpick into the center of the cake. This is an easier way to resourcefully determine when your cake is either done, or nearly done baking.
Inserting the skewer or toothpick halfway down should come out clean. This means that there should be few crumbs and no visible wet batter clinging to it.
If there is wet batter and/or uncooked crumbs present, then put the cake back in for about 5 more minutes. Then check again.

The thing about my pound cake recipe is that you can make so many flavors out of it just besides vanilla. For example, chocolate marbled pound cake, coconut, strawberry, peanut butter, and many more flavors.
I have been baking cakes, cookies, pies, and many other things since I was twelve. So, I do have a few years of experience under my belt or apron should I say. My delicious homemade pound cake. I can’t wait until you try it.

Please be sure you follow these techniques so that you will have the best baking experience ever! I know this is going to seem like a lot of steps, but once you get the hang of it, it will be a breeze!
1. Get Your Mixer
And the attachments that go with it. I suggest using the paddle for mixing up your cake. Go ahead and get your pan, you can use a Bundt pan or an Angel food cake pan.
2. Bundt Pan
Grease and flour the Bundt pan using either Pam with the flour in it or Bakers Joy. Pam works better for me. Get yourself a good Pound Cake recipe. I will be giving you one at the end of the posts.
Get your measuring cup(s) and measuring spoon(s) that you are going to need. Now you have all your ingredients together, start measuring them out as directed by the recipe. Now comes the fun part!
5. Mixing the Ingredients
Add the ingredients in the order they appear in your recipe and mix well. This is an especially crucial step to ensure that your cake comes out beautifully and is not a flop!
6. Prepared Pan
Now pour the prepared mix into the pan (Your batter will be thick). Making sure you get it as even as you can. I usually just give it a few little shakes to spread it out.
7. Bake the Cake
Place the pound cake into a preheated 350-degree oven. Bake for 1 hour and 10 minutes. When you take the cake out of the oven place it on a cake rack and let it cool completely. For 5 minutes.
8. Check for Doneness
Check for doneness, I do this by inserting a toothpick in the thickest part of the cake. When it comes out clean it’s done. Cool on a cake rack for 5 minutes and then turn out on the cake rake and let it finish cooling and enjoy!

Basic Powdered Sugar- This is an extremely easy one to make with only 3 ingredients that will give your baked goods just a little dash of sweetness for some added flavor. This icing is considered wet icing because it does not dry hard. Take extra care if you pack them up for transport. Excellent for cinnamon rolls.

Well, first, I am a lover of all things sweet. I just love desserts and treats. I have to say this is my favorite thing about baking and creating cakes and cookies.
Many people make the mistake of choosing a cake mix because it is “easier”. However, what they don’t realize is that cake mixes are full of preservatives and other unnecessary ingredients that will make your cake dense and dry.
Do you know why Sara Lee uses a cake mix for their cakes? The answer is simple: convenience. It takes longer to prepare a homemade cake or cupcakes than it does a store-bought cake. But homemade cakes and cupcakes are so much more enjoyable than store-bought ones.
The ones you buy from the bakeries, you don’t really know how long they have been frozen before they are thawed out and decorated.
6 Tips for Making the Perfect Cake
1. Follow the Recipe
This is as important as the ingredients you use in your cakes. Follow the recipe just as it instructs you to do. Do not try and cut corners! This will end in disaster!
For example, if it tells you to add your eggs one at a time and mix well after each one, you need to do that. Speaking of eggs, I prefer to use brown eggs in my cakes.
2. Choose the Right Recipe
There are many recipes out there for making the perfect cake. However, not every recipe will work well for everyone.

Choosing the right ingredients is crucial for your cake to turn out moist and delicious. I personally love White-Lily Unbleached Self-Rising flour for my cakes. It truly makes your cakes lite and fluffy.
I also prefer Bordens Whole Buttermilk when my recipes call for it and I really like using Blue PlateMayonnaise in my cakes instead of oil.
The reason for the mayonnaise is it really does make the cake moist and delicious. You use the same amount of mayonnaise that you would oil for your recipes.
4. Prepare the Ingredients
To make sure your cake turns out perfectly, follow these steps before starting to bake. 1) Measure the ingredients. You need to measure the dry ingredients first because they affect how much liquid you add later. 2) Mix the dry ingredients together. 3) Add the wet ingredients. 4) Bake the cake. 5) Cool the cake.
FYI: Don’t over-mix your cake batter, mix until ingredients are well incorporated.
5. Bake at the Proper Temperature
If you use an oven thermometer, you will know when your cake is done. However, there are other ways to tell if your cake is ready.
One method is to check the consistency of the batter. It should be thick enough to hold its shape, but not so thick that it won’t spread evenly across the pan.
